We roast Alma De Tierra to a medium level to balance the sweetness of the caramel & brown sugar against the acidity of the raspberry.
 
These guys have five acres of farm land, two of which are dedicated to coffee. The remaining area is a mixture of agriculture farming and as a reserve. The majority of the coffee planted is Villa Sarchi which is a natural mutation of the bourbon varietal.
